Easy No-Knead Sesame Rolls
These no-knead rolls are extremely simple, and they are perfect for when you want to make rolls but don’t have a lot of ingredients on hand. They come together with just water, yeast, flour, and salt—plus some extra salt and some nutty sesame seeds on top for added flavor. This is a great beginner recipe, and a good introduction to bread baking and working with yeasted doughs. Bonus, they are accidentally vegan!

Ingredients:
350 ml warm water (1 2/3 cups)
7 g of active dry yeast (1 envelope)
450 g all-purpose flour (3/14 cups). Substitute 25% of the weight with rye flour for a heartier roll.
1 tsp kosher salt
1 tbsp sesame seeds + 1/2 tbsp flaky sea salt before baking
Method:
Whisk the yeast into the warm water in a large mixing bowl.
Whisk the flour and kosher salt together in a separate bowl.
Slowly mix in the flour into the warm water, just a little at a time, until it is fully combined. Cover the bowl with a clean kitchen towel and set it aside in a warm spot until it doubles in size. Alternatively, you can let this cold rise in the fridge overnight for up to 12 hours. If doing that, cover it tightly with plastic wrap instead.
Preheat the oven to 450°F. Line a large baking sheet with parchment paper.
Lightly dust a clean work surface with flour. Dump the bread dough onto the surface and dust the top of it with flour as well. Using a sharp knife or bench scraper, divide the dough into eight pieces. These do not need to be super even or look perfect. Using the bench scraper or knife, transfer each roll to the parchment paper, leaving a small amount of space between each roll. The dough will be sticky, so use whatever method you need to transfer the rolls to the baking sheet—go ahead and do it! I used a combo of a bench scraper and a spoon.
Sprinkle the tops of the rolls with sesame seeds and flaky sea salt. Bake for 18-20 minutes, or until golden and baked through. Transfer the rolls to a wire rack immediately to cool off. Serve the rolls warm and enjoy! These are best eaten right away, but they will stay fresh in an airtight container for up to 1 or 2 days. To serve, just reheat the rolls in the oven. Enjoy!
