South African-Inspired Curry Beef and Egg Bowls

This recipe is inspired by the South African dish bobotie, a traditional South African dish filled with meat, dried fruit, and bread, and topped with an egg custard, baked to quiche-like perfection.

I’ve been wanting to make this dish for a long time, but I was recently in need of a quick, high-protein lunch that would fill me up but also satisfy my spice/flavor needs. I broke down the components of bobotie and turned it into this easy, under-30-minute meal that everyone will enjoy.

These bowls are packed with flavor, protein, spice, and a little sweetness. This dish is so versatile, too—you could make it for any meal of the day. Try this out, and let me know what you think!

Prep Time: 2 minutes | Cook Time: 15-20 minutes

Serves: 4

Ingredients:

  • 2 tbsp extra virgin olive oil

  • 1 lb lean grass-fed ground beef

  • 1 tsp kosher salt

  • 1/2 tsp freshly cracked black pepper

  • 1/4 tsp each of good curry powder, cumin, oregano, paprika, turmeric, garlic powder, and onion powder (or more to taste)

  • 2 slices of bread, torn into bite-sized pieces (any kind will really do)

  • 2 large eggs

  • 1/3 cup whole milk (or unsweetened non-dairy works, too)

  • 1/4 cup mango chutney

Method:

  1. Place a large skillet over medium-high heat and add the oil.

  2. Once the oil is hot, add the beef, and begin to break it up. Season it with salt and pepper, continuing to break up the meat.

  3. Once the meat is almost fully cooked and ground, add the remaining spices. Stir them into the meat, and continue cooking for an additional 1-2 minutes.

  4. Add the torn bread and eggs to the meat, and stir to combine. Add the milk, and continue stirring until the bread has absorbed all the liquid and the eggs are well mixed and cooked.

  5. Finally, add the mango chutney and stir until well combined. Taste the mixture and add more salt, pepper, seasonings, or chutney as needed to suit your taste.

  6. Serve and enjoy!
