Lemon Dill Potato Salad
This is the only picture I snagged of this potato salad, but this recipe is too good not to share. This is a very simple potato salad, yet it yields so much bright and refreshing flavor—perfect for your next summer gathering.
Prep Time: 10 minutes | Cook Time: 15-20 minutes
Serves: a lot!
Ingredients:
4 lbs russet potatoes, peeled and chopped into small chunks
1 tsp dried minced onion
1 cup sour cream
1 cup mayo
juice of 1 lemon
1/4 cup finely chopped dill
kosher salt and freshly cracked black pepper to taste
Method:
Add your potato chunks and dried minced onion to a large pot and cover them with cold water and generous pinch of kosher salt. Bring to a boil. Simmer until they are fork tender. Drain and cool.
In a small bowl, whisk together the sour cream, mayo, lemon juice, dill, and salt and pepper until combined. Add your potatoes to a large bowl. Gently mix the potatoes and the dressing together until combined. Refrigerate for at least 1 hour. Enjoy!
