Strawberry Rhubarb Norwegian 75’s

These are a twist on the classic French 75’s but with a Norwegian twist. Instead of gin, these call for aquavit. Aquavit is a Norwegian liquor that is flavored with fennel and caraway, so it tastes similar to licorice. Feel free to use gin if you cannot find aquavit near you.

These cocktails feature a homemade strawberry rhubarb syrup, Norwegian aquavit, lemon juice, and prosecco. Everyone will love these!

If fresh rhubarb isn’t available near you, just use all strawberries :)

Also, the recipe below is for 1 beverage. If you would like to batch this cocktail, just use equal parts syrup and alcohol in a pitcher with ice, and then bump up the other ingredients accordingly.

Prep Time: 10 minutes | Cook Time: 10 minutes

Serves: 1

Ingredients:

  • 1 oz strawberry rhubarb syrup (recipe below)

  • 1 oz aquavit or gin

  • 1/2 oz lemon juice

  • top off with prosecco or champagne

Method:

  1. To a cup of ice or a cocktail shaker filled with ice (however you prefer your drink), add the syrup, liquor, and juice. Shake or stir to combine. Top off with prosecco, and enjoy!

Strawberry Rhubarb Syrup

Prep Time: 10 minutes | Cook Time: 10-15 minutes

Yields: 2 cups

Ingredients:

  • 1 1/2 cups fresh strawberries, quartered

  • 1 1/2 cups fresh rhubarb, sliced

  • 1 1/2 cups cane sugar

  • 1 1/2 cups water

    • Since everything is equal parts, feel free to adjust the recipe accordingly!

Method:

  1. Combine everything in a pot. Bring to a boil, then reduce the heat to low and simmer until the fruit has broken down, about 10 minutes. Cut the heat and let it cool. Once cool, strain the liquid from the fruit. Discard the fruit, and keep the syrup in your container of choice in the fridge for up to a week. Enjoy!
