Honey Balsamic Strawberry Prosciutto Flatbread

I know strawberry season is technically over, but they are still good! I’ve had this idea for a while to create a strawberry pizza, but I’ve been struggling with what to use as a base. I found a whipped feta spread at Trader Joe’s that worked perfectly for this, and I'm thrilled with the results. Make this for your 4th of July party this weekend! This is the perfect summer flatbread, and it’s extremely easy too.

Prep Time: 5 minutes | Cook Time: 10 minutes

Serves: 4-6

Ingredients:

  • 1 flatbread pizza crust

  • olive oil

  • 1 cup strawberries, quartered

  • 1-2 tsp aged balsamic vinegar

  • 1 tsp honey

  • 1 cup whipped feta

    • I purchased mine from Trader Joe’s, but it is also extremely easy to make at home. Simply whip together a block of feta with equal parts cream cheese until fluffy. You can also refer to a different recipe for this!

  • 2 oz of prosciutto, torn into smaller pieces

  • 1/2 cup arugula

  • balsamic glaze and hot honey for serving

Method:

  1. Preheat oven to 425°F.

  2. Brush olive oil onto both sides of the flatbread. Place on a baking sheet.

  3. Combine the quartered strawberries with the balsamic vinegar and honey in a small bowl. Set aside while you prepare the rest of the flatbread.

  4. Evenly spread the whipped feta onto the flatbread.

  5. Scatter the honey balsamic strawberries evenly across the top of the whipped feta.

  6. Add the torn prosciutto to the pizza. I like to add mine to the bare parts of the pizza.

  7. Bake for 10 minutes. Cool for 5 minutes.

  8. Top with the arugula. Drizzle on balsamic glaze and hot honey, and enjoy!
